I will finish attaching the belly fabric and doing the first shrink in the morning and then starting the sides on my PA-11 fuselage. Do I need to worry about pulling the longerons inward when I shrink the bottom piece?

There is always a chance of that happening.  I can't seem to find a copy but on the fuselage blue print Piper has instructions that show to tap and slightly bow out the longerons between the weld clusters so that when you cover and shrink the fabric they pull straight.  Use a rubber mallet and a chunk of 2x4.  

The problem with tube and fabric is that you're not going to have perfect lines when the fabric pulls against a flexible tube. It does not take much pressure to deflect the longerons.
